Our Founder's Journey
We are Alejo and Fabiola Sanchez, the founders of Don Alejo Coffee—now rebranded as Indomable Coffee—a Mexican-inspired coffee shop located in the heart of East Harlem.
Indomable is more than just a coffee shop. It’s a way of life—an expression of freedom, resilience, and the unwavering belief that we are unstoppable.
Our story didn’t begin with a background in coffee, but with a deep appreciation for its power to bring people together. In our cultures, coffee is more than a beverage—it’s a ritual, a symbol of hospitality, and a moment of connection.
With years of experience in the restaurant industry, we decided to channel our passion for coffee into something tangible. Alejo dedicated himself to learning everything about coffee, while Fabiola nurtured and supported the vision.
Coming from entrepreneurial families, we’ve combined academic knowledge with hands-on experience to build our foundation in business. As proud parents of three boys, we draw daily inspiration from them to remain resilient, fearless, and purpose-driven.
On September 3, 2022, we opened the doors to Indomable Coffee, a space where community, culture, and quality come together. Our shop serves well-sourced, organic, and sustainable coffee from around the world. We are proud to say we not only source our beans but also roast our own coffee. After the roasting and cupping stages, our baristas dedicate hours to dialing in the perfect balance—making sure every cup is just right. While we celebrate Mexican coffee traditions, we are not limited by them. Coffee, like the human spirit, is indomitable—wild, untamed, and full of possibilities.
